  • 2 pounds Beef Chuck Roast Trimmed and cut into bite-sized pieces.
  • 1 large Yellow Onion Diced finely.
  • 1 medium Green Bell Pepper Diced.
  • 4 cloves Garlic Minced.
  • 4 cups Low-Sodium Beef Broth
  • 2 tablespoons Worcestershire Sauce
  • 1 tablespoon Italian Seasoning
  • to taste Salt and Pepper Adjust according to preference.
  • 1 cup Shredded Provolone Cheese or Cheez Whiz For topping.
  • 1 handful Fresh Parsley Chopped, for garnish.

Instructions
 

  • Dice the beef chuck roast into bite-sized pieces. Chop the onion, green bell pepper, and mince the garlic.
  • In a large pot, heat olive oil over medium heat. Sear the beef until browned on all sides, about 4-5 minutes per batch. Remove and set aside.
  • Add the chopped onion and green bell pepper to the pot. Sauté for about 5 minutes until soft.
  • Add minced garlic and sauté for another minute until fragrant.
  • Return the beef to the pot, pour in the beef broth, and deglaze the pot.
  • Stir in Worcestershire sauce and Italian seasoning, then add salt and pepper. Bring to a simmer, cover, and let cook for 1.5 to 2 hours.
  • Check for tenderness and adjust seasoning as needed.
  • Ladle stew into bowls, topping with cheese and garnishing with parsley.

Notes

This stew can be customized with additional vegetables or spices according to your taste.
