Instructions
Dice the beef chuck roast into bite-sized pieces. Chop the onion, green bell pepper, and mince the garlic.
In a large pot, heat olive oil over medium heat. Sear the beef until browned on all sides, about 4-5 minutes per batch. Remove and set aside.
Add the chopped onion and green bell pepper to the pot. Sauté for about 5 minutes until soft.
Add minced garlic and sauté for another minute until fragrant.
Return the beef to the pot, pour in the beef broth, and deglaze the pot.
Stir in Worcestershire sauce and Italian seasoning, then add salt and pepper. Bring to a simmer, cover, and let cook for 1.5 to 2 hours.
Check for tenderness and adjust seasoning as needed.
Ladle stew into bowls, topping with cheese and garnishing with parsley.
