Instructions
Blanch and peel the tomatoes, then chop them, discarding the core.
Heat olive oil in a large saucepan over medium heat until shimmering.
Add the chopped onion and sauté for 3-5 minutes until translucent.
Add minced garlic and stir for about 1 minute until fragrant.
Incorporate the chopped tomatoes and stir well.
Sprinkle in oregano, salt, pepper, and optional red pepper flakes. Stir to combine.
Bring to a gentle simmer and cook for 20-25 minutes, stirring occasionally.
Add chopped basil and simmer for an additional 5 minutes.
Remove from heat and blend if a smoother texture is desired.
Cool completely before storing in an airtight container.
Notes
This sauce can be refrigerated for up to a week or frozen for longer storage.
