  • 6-8 pieces Fresh Tomatoes Roma or San Marzano tomatoes are preferred.
  • 3-4 cloves Garlic Mince finely.
  • 1 medium Onion Finely chopped yellow onion.
  • 2 tablespoons Olive Oil Extra virgin olive oil.
  • 1 handful Fresh Basil Roughly chopped.
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt To taste.
  • 1 pinch Black Pepper To taste.
  • 1 pinch Red Pepper Flakes Optional for heat.

Instructions
 

  • Blanch and peel the tomatoes, then chop them, discarding the core.
  • Heat olive oil in a large saucepan over medium heat until shimmering.
  • Add the chopped onion and sauté for 3-5 minutes until translucent.
  • Add minced garlic and stir for about 1 minute until fragrant.
  • Incorporate the chopped tomatoes and stir well.
  • Sprinkle in oregano, salt, pepper, and optional red pepper flakes. Stir to combine.
  • Bring to a gentle simmer and cook for 20-25 minutes, stirring occasionally.
  • Add chopped basil and simmer for an additional 5 minutes.
  • Remove from heat and blend if a smoother texture is desired.
  • Cool completely before storing in an airtight container.

Notes

This sauce can be refrigerated for up to a week or frozen for longer storage.
