  • 1 pound Chicken Breast Fresh boneless, skinless chicken breast, cut into bite-sized pieces.
  • 1/2 cup Cornstarch For coating the chicken before frying.
  • 1/4 cup Vegetable Oil For frying the chicken.
  • 1 each Red Bell Pepper Sliced into strips.
  • 1 each Green Bell Pepper Sliced into strips.
  • 1 cup Pineapple Chunks Canned, drained well.
  • 1 each Onion Medium, cut into wedges.
  • 2 cloves Garlic Minced.

Sweet and Sour Sauce

  • 1/2 cup Sugar
  • 1/2 cup Vinegar
  • 1/4 cup Ketchup
  • 1 tablespoon Soy Sauce

Seasoning

  • Salt To taste.
  • Pepper To taste.

Instructions
 

  • 1. Cut the chicken breast into bite-sized pieces and season with salt and pepper.
  • 2. Coat the chicken pieces with cornstarch and let sit for a few minutes.
  • 3. Heat vegetable oil in a skillet over medium-high heat and fry the chicken until golden brown.
  • 4. Remove chicken and drain on paper towels.
  • 5. In the same skillet, stir-fry bell peppers and onion for 2-3 minutes.
  • 6. Prepare the sauce by whisking together sugar, vinegar, ketchup, and soy sauce.
  • 7. Add garlic and pineapple to the skillet, cooking for an additional minute.
  • 8. Pour the sauce over the chicken and vegetables, stirring to coat.
  • 9. Let simmer for 2-3 minutes until the sauce thickens.
  • 10. Serve hot and enjoy!

Notes

For variations, consider using tofu instead of chicken or adding more vegetables.
