Instructions
Gather all your ingredients to streamline the cooking process.
In a large pot, heat olive oil over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
Add minced garlic and sauté for an additional minute.
Incorporate chopped carrots and celery, cooking for about 5 minutes until softened.
Add shredded turkey and cook for a few minutes to absorb flavors.
Pour in chicken broth and bring to a gentle boil, scraping any browned bits from the pot.
Add egg noodles and reduce heat to a simmer. Cook according to package instructions, about 6-8 minutes.
Add thyme and bay leaves to the pot.
Taste and adjust seasoning with salt and pepper as needed.
Remove bay leaves before serving. Serve hot, optionally garnished with fresh herbs.
Notes
