Instructions
Preheat your oven to 325°F (160°C).
Combine graham cracker crumbs and melted butter until it resembles wet sand. Press into the bottom of a 9-inch springform pan.
Bake the crust for about 10 minutes until golden brown.
Melt white chocolate in a microwave-safe bowl in 30-second intervals until smooth.
In a large mixing bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla bean paste, mixing until combined.
Fold in melted white chocolate, then add eggs one at a time, mixing on low speed.
Fold in diced strawberries and pour the filling over the baked crust.
Bake for 50-60 minutes until edges are set and center is slightly jiggly.
Let the cheesecake cool in the oven with the door ajar for 1 hour, then refrigerate for at least 4 hours.
Remove from the springform pan, top with whipped cream and additional strawberries before serving.
Notes
For variations, consider adding other berries or a swirl of fruit puree. This cheesecake can be made a day in advance for better flavor.
