Crust Ingredients

  • 1.5 cups Graham cracker crumbs Forms the base of the cheesecake crust.

Filling Ingredients

  • 8 ounces White chocolate High-quality chocolate for sweetness.
  • 16 ounces Softened cream cheese At room temperature for easy blending.
  • 1 cup Granulated sugar Balances the flavors.
  • 1 cup Sour cream Adds creaminess and a slight tang.
  • 2 cups Fresh strawberries Bring freshness and sweetness.
  • 3 large Eggs Bind the filling together.
  • 1 teaspoon Vanilla bean paste Adds depth to the flavor.

For Serving

  • Whipped cream For topping.

Instructions
 

  • Preheat your oven to 325°F (160°C).
  • Combine graham cracker crumbs and melted butter until it resembles wet sand. Press into the bottom of a 9-inch springform pan.
  • Bake the crust for about 10 minutes until golden brown.
  • Melt white chocolate in a microwave-safe bowl in 30-second intervals until smooth.
  • In a large mixing bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla bean paste, mixing until combined.
  • Fold in melted white chocolate, then add eggs one at a time, mixing on low speed.
  • Fold in diced strawberries and pour the filling over the baked crust.
  • Bake for 50-60 minutes until edges are set and center is slightly jiggly.
  • Let the cheesecake cool in the oven with the door ajar for 1 hour, then refrigerate for at least 4 hours.
  • Remove from the springform pan, top with whipped cream and additional strawberries before serving.

Notes

For variations, consider adding other berries or a swirl of fruit puree. This cheesecake can be made a day in advance for better flavor.
