Salad Ingredients

  • 1 head Romaine Lettuce Chopped
  • 1 cup Cherry Tomatoes Halved
  • 1 medium Cucumber Diced
  • 1 medium Red Bell Pepper Diced
  • 1/2 medium Red Onion Finely chopped
  • 1 cup Garbanzo Beans Drained and rinsed
  • 1/2 cup Feta Cheese Crumpled
  • 1/4 cup Kalamata Olives Sliced
  • 1/4 cup Fresh Parsley Chopped
  • 1/4 cup Olive Oil For dressing
  • 2 tablespoons Red Wine Vinegar For dressing
  • to taste Salt
  • to taste Black Pepper

Instructions
 

  • Wash all the fresh produce thoroughly and pat dry.
  • Chop the romaine lettuce into bite-sized pieces and place in a large mixing bowl.
  • Halve the cherry tomatoes and add them to the bowl.
  • Dice the cucumber and red bell pepper, and add them along with the finely chopped red onion.
  • Rinse the garbanzo beans and add them to the salad bowl.
  • Crumble the feta cheese over the salad.
  • Add the sliced Kalamata olives and chopped parsley.
  • In a separate bowl, whisk together olive oil, red wine vinegar, salt, and black pepper to create the dressing.
  • Pour the dressing over the salad and toss gently to combine.
  • Let the salad sit for about 10 minutes before serving.
  • Serve in individual bowls or on a large platter, garnished with additional feta cheese or parsley if desired.
