Instructions
Wash all the fresh produce thoroughly and pat dry.
Chop the romaine lettuce into bite-sized pieces and place in a large mixing bowl.
Halve the cherry tomatoes and add them to the bowl.
Dice the cucumber and red bell pepper, and add them along with the finely chopped red onion.
Rinse the garbanzo beans and add them to the salad bowl.
Crumble the feta cheese over the salad.
Add the sliced Kalamata olives and chopped parsley.
In a separate bowl, whisk together olive oil, red wine vinegar, salt, and black pepper to create the dressing.
Pour the dressing over the salad and toss gently to combine.
Let the salad sit for about 10 minutes before serving.
Serve in individual bowls or on a large platter, garnished with additional feta cheese or parsley if desired.
