Ingredients

Main Ingredients

  • 4-6 pieces Bone-in, skin-on chicken thighs Higher fat content ensures juiciness.
  • 3 tablespoons Extra virgin olive oil Enhances richness and locks in moisture.
  • 4 cloves Minced garlic Adds robust flavor.
  • 2 tablespoons Freshly squeezed lemon juice Brightens the dish with acidity.
  • 1 tablespoon Honey Balances acidity and adds sweetness.
  • 2 teaspoons Smoked paprika Imparts a warm, smoky flavor.
  • 1 teaspoon Kosher salt Enhances overall flavor.
  • 1 teaspoon Freshly ground black pepper Adds subtle heat.
  • 2 tablespoons Chopped fresh parsley or cilantro For garnish.

Instructions

  • Gather all your ingredients to ensure a smooth cooking process.
  • In a mixing bowl, combine olive oil, minced garlic, lemon juice, honey, smoked paprika, salt, and pepper. Whisk together to create a marinade.
  • Place chicken thighs in a resealable plastic bag or shallow dish. Pour marinade over chicken, ensuring each piece is well-coated. Seal or cover and refrigerate for at least 1 hour, preferably overnight.
  • Preheat your oven to 400°F (200°C). Allow chicken to sit at room temperature for about 15 minutes before cooking.
  • Grease a baking dish with cooking spray or olive oil. Arrange marinated chicken thighs skin side up in the dish, pouring any remaining marinade over them.
  • Bake in the preheated oven for 30-35 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  • Turn on the broiler for an additional 3-5 minutes to crisp the skin.
  • Remove from oven and let rest for 5-10 minutes before serving.
  • Garnish with freshly chopped herbs and serve hot.

Notes

For variations, consider adding cayenne pepper for heat, using different herbs, or trying chicken breasts for a leaner option.
