Instructions
In a large mixing bowl, combine the rolled oats, nut butter, honey or maple syrup, shredded coconut, chia seeds or flaxseeds, and salt. If you’re adding chocolate chips, nuts, or vanilla extract, include them at this stage as well.
Using a spatula or your hands, mix the ingredients until they are well combined. The mixture should be sticky and hold together when pressed. If it seems too dry, you can add a bit more nut butter or honey to achieve the right consistency.
Once the mixture is well combined, cover the bowl with plastic wrap or a lid and refrigerate for about 30 minutes. This step helps the mixture firm up, making it easier to roll into balls.
After the mixture has chilled, remove it from the refrigerator. Use your hands to scoop out a tablespoon-sized amount of the mixture and roll it into a ball between your palms. Continue this process until all the mixture is shaped into balls.
If you’re using optional coatings, roll each ball in your choice of crushed nuts, cocoa powder, or shredded coconut.
Place the finished oatmeal balls on a baking sheet or plate lined with parchment paper, then refrigerate them for another 30 minutes to set.
