Instructions
Heat a large pot or Dutch oven over medium heat. Add olive oil and warm it up.
Add crumbled Italian sausage to the pot. Cook for about 5-7 minutes until browned.
Add chopped onion and minced garlic. Sauté for 3-4 minutes until onion is translucent.
Pour in chicken broth and stir well, scraping the bottom of the pot.
Add short pasta to the pot, stir to submerge, and bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes.
Uncover and stir in heavy cream and spinach. Mix until spinach wilts, about 2-3 minutes.
Add grated Parmesan cheese and stir until melted. Season with salt and pepper as needed.
Let the dish rest for a couple of minutes before serving. Garnish with extra Parmesan if desired.
Serve hot, optionally garnished with fresh herbs.

For variations, consider adding different vegetables or using half-and-half for a lighter version.
