  • 1 pound Italian Sausage Choose mild or spicy based on preference.
  • 12 ounces Short Pasta (e.g., penne or fusilli) Your favorite type of short pasta.
  • 2 cups Low-Sodium Chicken Broth Adds depth and moisture.
  • 1 cup Heavy Cream Key for achieving rich texture.
  • 4 cloves Garlic, minced Essential for flavor.
  • 1 medium Onion, finely chopped Provides sweetness and depth.
  • 0.5 cup Parmesan Cheese, grated Adds salty, nutty flavor.
  • 2 cups Fresh Spinach Leaves Adds nutrition and color.

Instructions
 

  • Heat a large pot or Dutch oven over medium heat. Add olive oil and warm it up.
  • Add crumbled Italian sausage to the pot. Cook for about 5-7 minutes until browned.
  • Add chopped onion and minced garlic. Sauté for 3-4 minutes until onion is translucent.
  • Pour in chicken broth and stir well, scraping the bottom of the pot.
  • Add short pasta to the pot, stir to submerge, and bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes.
  • Uncover and stir in heavy cream and spinach. Mix until spinach wilts, about 2-3 minutes.
  • Add grated Parmesan cheese and stir until melted. Season with salt and pepper as needed.
  • Let the dish rest for a couple of minutes before serving. Garnish with extra Parmesan if desired.
  • Serve hot, optionally garnished with fresh herbs.

Notes

For variations, consider adding different vegetables or using half-and-half for a lighter version.
