Instructions
Preheat your oven to 425°F (220°C).
Wash the potatoes thoroughly and cut them into even-sized chunks, approximately 1 to 1.5 inches.
In a medium saucepan, melt the unsalted butter over medium heat, stirring occasionally until it turns golden brown.
Remove the browned butter from heat and transfer it to a large mixing bowl.
Add the olive oil to the bowl with the browned butter.
Add the potato chunks, salt, and pepper to the bowl and toss until evenly coated.
Spread the potatoes on a baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through.
Grate the Parmesan cheese while the potatoes are roasting.
Once the potatoes are golden brown, remove them from the oven and sprinkle the grated Parmesan on top.
Garnish with fresh parsley if desired and serve immediately.

For variations, consider adding herbs, spices, or other vegetables to the mix.
