  • 2 pounds Yukon Gold or Red Potatoes Cut into even-sized chunks.
  • ½ cup Unsalted Butter For browning.
  • ½ cup Freshly Grated Parmesan Cheese Avoid pre-grated cheese for best results.
  • 2 tablespoons Extra Virgin Olive Oil For roasting.
  • 1 teaspoon Kosher Salt For seasoning.
  • ½ teaspoon Freshly Ground Black Pepper Adjust to taste.
  • 2 tablespoons Fresh Parsley Finely chopped, optional for garnish.

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Wash the potatoes thoroughly and cut them into even-sized chunks, approximately 1 to 1.5 inches.
  • In a medium saucepan, melt the unsalted butter over medium heat, stirring occasionally until it turns golden brown.
  • Remove the browned butter from heat and transfer it to a large mixing bowl.
  • Add the olive oil to the bowl with the browned butter.
  • Add the potato chunks, salt, and pepper to the bowl and toss until evenly coated.
  • Spread the potatoes on a baking sheet in a single layer and roast for 25-30 minutes, flipping halfway through.
  • Grate the Parmesan cheese while the potatoes are roasting.
  • Once the potatoes are golden brown, remove them from the oven and sprinkle the grated Parmesan on top.
  • Garnish with fresh parsley if desired and serve immediately.

Notes

For variations, consider adding herbs, spices, or other vegetables to the mix.
