Instructions
Preheat your oven to 350°F (175°C) and prepare your work surface.
In a large mixing bowl, combine flour, granulated sugar, baking powder, and salt. Whisk until well blended.
Add softened butter to the dry mix and work it into the flour until it resembles coarse crumbs.
Beat the egg in a separate bowl and add it to the flour mixture. Stir until the dough comes together.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Prepare the apple filling by mixing diced apples with brown sugar, cinnamon, lemon juice, and nutmeg.
Roll out the chilled dough to ¼-inch thickness and cut out circles with a cookie cutter.
Place half of the circles on a baking sheet, spoon apple filling onto each, and top with another circle of dough.
Seal the edges with a fork and cut slits on top for steam to escape.
Brush with egg wash and sprinkle with sugar before baking for 20-25 minutes.
Allow to cool on a wire rack before serving.
