Apple Filling

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare your work surface.
  • In a large mixing bowl, combine flour, granulated sugar, baking powder, and salt. Whisk until well blended.
  • Add softened butter to the dry mix and work it into the flour until it resembles coarse crumbs.
  • Beat the egg in a separate bowl and add it to the flour mixture. Stir until the dough comes together.
  • Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  • Prepare the apple filling by mixing diced apples with brown sugar, cinnamon, lemon juice, and nutmeg.
  • Roll out the chilled dough to ¼-inch thickness and cut out circles with a cookie cutter.
  • Place half of the circles on a baking sheet, spoon apple filling onto each, and top with another circle of dough.
  • Seal the edges with a fork and cut slits on top for steam to escape.
  • Brush with egg wash and sprinkle with sugar before baking for 20-25 minutes.
  • Allow to cool on a wire rack before serving.
