  • 1/2 cup Brown Sugar Light or dark brown sugar can be used.
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt Use fine sea salt for best results.
  • 1/2 cup Unsalted Butter Softened to room temperature.
  • 1 cup Chocolate Chips Semi-sweet or your choice of chocolate.
  • 1 large Egg Room temperature for optimal mixing.
  • 1 teaspoon Vanilla Extract Use high-quality for best results.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Mash the ripe bananas in a mixing bowl until smooth.
  • Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the mashed bananas and egg to the mixture and mix until well combined.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in the chocolate chips gently using a spatula.
  • Drop rounded balls of dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes until edges are lightly golden.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to a week. Can be frozen for up to three months.
