  • 2 pounds Fresh Tomatoes Roma or San Marzano varieties preferred.
  • 4-6 cloves Garlic Minced finely.
  • 1 medium Onion Finely chopped.
  • 2-3 tablespoons Olive Oil Extra virgin olive oil.
  • 1/2 cup Fresh Basil Packed and roughly torn.
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt Adjust to taste.
  • 1/4 teaspoon Crushed Red Pepper Flakes Optional for heat.
  • 1 teaspoon Sugar Optional to balance acidity.

Instructions
 

  • Prepare the tomatoes by blanching them in boiling water for 30 seconds, then transfer to an ice bath, peel, and chop.
  • Heat olive oil in a large skillet over medium heat. Sauté the chopped onion until translucent and slightly golden, about 5-7 minutes.
  • Add minced garlic and sauté for another 1-2 minutes until fragrant.
  • Introduce the chopped tomatoes, stir, and let the mixture come to a simmer. Reduce heat to low and simmer for 30-45 minutes.
  • Taste and adjust seasoning with salt, pepper, and sugar as needed. Add crushed red pepper flakes if desired.
  • Add dried oregano and half of the fresh basil, stirring to incorporate. Simmer for an additional 5 minutes.
  • Remove from heat and stir in the remaining fresh basil before serving.
  • Serve immediately over pasta, or cool and store for later use.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
