Instructions
Prepare the tomatoes by blanching them in boiling water for 30 seconds, then transfer to an ice bath, peel, and chop.
Heat olive oil in a large skillet over medium heat. Sauté the chopped onion until translucent and slightly golden, about 5-7 minutes.
Add minced garlic and sauté for another 1-2 minutes until fragrant.
Introduce the chopped tomatoes, stir, and let the mixture come to a simmer. Reduce heat to low and simmer for 30-45 minutes.
Taste and adjust seasoning with salt, pepper, and sugar as needed. Add crushed red pepper flakes if desired.
Add dried oregano and half of the fresh basil, stirring to incorporate. Simmer for an additional 5 minutes.
Remove from heat and stir in the remaining fresh basil before serving.
Serve immediately over pasta, or cool and store for later use.
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
