Gather all ingredients and equipment.
Heat olive oil in a large pot over medium heat until shimmering.
Add chopped onion and sauté for about 5 minutes until translucent.
Add minced garlic and sauté for an additional minute.
Add diced potatoes and stir well. Cook for 2-3 minutes.
Pour in vegetable broth and bring to a gentle boil.
Reduce heat to a simmer, cover, and cook for about 15 minutes until potatoes are tender.
Add chopped kale and stir. Cook for 5 minutes until wilted.
Stir in heavy cream and season with salt, pepper, and red pepper flakes.
Simmer for an additional 5 minutes to meld flavors.
Ladle soup into bowls and garnish with Parmesan cheese.
