Instructions
Preheat your oven to 425°F (220°C).
Wash the russet potatoes thoroughly under cold water and pat them dry.
Place each potato on a cutting board with wooden spoons on either side to prevent slicing all the way through.
Carefully slice the potato into thin, even slices, about 1/8 inch apart.
Arrange the sliced potatoes on a baking sheet lined with parchment paper.
In a small bowl, combine the olive oil, minced garlic, salt, and pepper.
Coat each potato with the olive oil mixture, ensuring to get it between each slice.
Sprinkle the fresh herbs over the potatoes.
Cover the baking sheet with aluminum foil and bake for 30-35 minutes.
Remove the foil and bake for an additional 15-20 minutes until crispy.
Sprinkle Parmesan cheese over the potatoes during the last 5 minutes of baking.
Once golden brown and crispy, remove from the oven and let cool for a few minutes before serving.
