Ingredients
  

Potatoes

  • 4 medium Russet Potatoes Approximately 6-8 ounces each.

Oil and Seasoning

  • 3-4 tablespoons Olive Oil Extra virgin for best flavor.
  • 1 tablespoon Fresh Rosemary Chopped.
  • 1 tablespoon Fresh Thyme Chopped.
  • 2-3 cloves Garlic Minced.
  • to taste Salt Kosher salt preferred.
  • to taste Black Pepper Freshly cracked.
  • 1/4 cup Parmesan Cheese Grated, optional.

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Wash the russet potatoes thoroughly under cold water and pat them dry.
  • Place each potato on a cutting board with wooden spoons on either side to prevent slicing all the way through.
  • Carefully slice the potato into thin, even slices, about 1/8 inch apart.
  • Arrange the sliced potatoes on a baking sheet lined with parchment paper.
  • In a small bowl, combine the olive oil, minced garlic, salt, and pepper.
  • Coat each potato with the olive oil mixture, ensuring to get it between each slice.
  • Sprinkle the fresh herbs over the potatoes.
  • Cover the baking sheet with aluminum foil and bake for 30-35 minutes.
  • Remove the foil and bake for an additional 15-20 minutes until crispy.
  • Sprinkle Parmesan cheese over the potatoes during the last 5 minutes of baking.
  • Once golden brown and crispy, remove from the oven and let cool for a few minutes before serving.
