Instructions
 

  • Prepare the crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Stir until evenly coated. Press into the bottom of a 9x13 inch baking dish.
  • Bake the crust: Preheat oven to 350°F (175°C). Bake for 8-10 minutes until lightly golden. Cool completely.
  • Make the cream cheese mixture: Beat softened cream cheese with granulated sugar until smooth. Add powdered sugar and vanilla extract, and beat until incorporated.
  • Incorporate the heavy cream: Whip heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
  • Add the pineapple: Fold in the drained crushed pineapple until evenly distributed.
  • Layer the dessert: Spoon the cream cheese and pineapple mixture over the cooled crust, smoothing it out.
  • Chill the dessert: Cover and refrigerate for at least 4 hours or overnight.
  • Garnish and serve: Top with coconut flakes or fresh fruit before serving. Cut into squares and serve chilled.
