Instructions
 

  • 1. Peel and segment the oranges, collecting all juice in a bowl.
  • 2. In a mixing bowl, combine Greek yogurt, honey, and vanilla bean paste. Whisk until smooth.
  • 3. Add a pinch of salt to the yogurt mixture and stir well.
  • 4. Gently fold in the orange segments into the yogurt mixture.
  • 5. Chop the mint leaves and fold them into the salad.
