Instructions
Gather all ingredients on a clean countertop.
In a mixing bowl, combine apricot preserves, soy sauce, Dijon mustard, and minced garlic. Whisk until well blended.
Set aside 1/4 cup of the sauce for glazing later.
Place chicken thighs in a resealable bag or shallow dish, pour remaining sauce over, and marinate for at least 30 minutes.
Preheat oven to 375°F (190°C) or heat a skillet over medium-high heat.
Remove marinated chicken from the fridge, let excess marinade drip off, and place in a baking dish or skillet.
Bake for 25-30 minutes or cook in skillet for 6-7 minutes on each side until cooked through.
During the last 10 minutes, brush reserved sauce over the chicken.
Let chicken rest for 5 minutes before serving.
Garnish with fresh herbs and serve with your favorite side dishes.
