Instructions
 

  • Gather all ingredients on a clean countertop.
  • In a mixing bowl, combine apricot preserves, soy sauce, Dijon mustard, and minced garlic. Whisk until well blended.
  • Set aside 1/4 cup of the sauce for glazing later.
  • Place chicken thighs in a resealable bag or shallow dish, pour remaining sauce over, and marinate for at least 30 minutes.
  • Preheat oven to 375°F (190°C) or heat a skillet over medium-high heat.
  • Remove marinated chicken from the fridge, let excess marinade drip off, and place in a baking dish or skillet.
  • Bake for 25-30 minutes or cook in skillet for 6-7 minutes on each side until cooked through.
  • During the last 10 minutes, brush reserved sauce over the chicken.
  • Let chicken rest for 5 minutes before serving.
  • Garnish with fresh herbs and serve with your favorite side dishes.
