  • Heat a skillet over medium heat and add cooking oil.
  • Add diced onion and bell pepper to the skillet. Sauté for 3-4 minutes until the onion is translucent.
  • Add minced garlic and sauté for an additional 30 seconds until fragrant.
  • Increase heat to medium-high and add ground beef. Cook until browned, about 5-7 minutes.
  • Season the beef mixture with salt, pepper, and any additional spices. Stir and let cook for another minute.
  • Remove from heat and let cool slightly.
  • In another skillet, place a flour tortilla over medium heat. Sprinkle ½ cup of shredded cheese on one half.
  • Spoon a generous amount of the beef mixture over the cheese, then top with another ½ cup of shredded cheese.
  • Fold the tortilla in half and cook for 3-4 minutes on one side until golden brown.
  • Flip and cook the other side for another 3-4 minutes until golden brown and cheese is melted.
  • Remove from skillet and let rest for a minute before slicing into wedges.
  • Repeat with remaining tortillas, beef mixture, and cheese.
  • Serve hot with optional toppings like sour cream, salsa, or avocado.
