Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine ground chicken, breadcrumbs, egg, buffalo sauce, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
Form the mixture into golf ball-sized meatballs, about 1 to 1.5 inches in diameter.
Line a baking sheet with parchment paper and place the meatballs on it, spacing them about an inch apart.
If using olive oil, lightly brush the tops of the meatballs.
Bake for 20-25 minutes, or until cooked through and golden brown.
Let cool for a few minutes before serving, garnished with fresh parsley if desired.
