Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine ground chicken, breadcrumbs, egg, buffalo sauce, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
  • Form the mixture into golf ball-sized meatballs, about 1 to 1.5 inches in diameter.
  • Line a baking sheet with parchment paper and place the meatballs on it, spacing them about an inch apart.
  • If using olive oil, lightly brush the tops of the meatballs.
  • Bake for 20-25 minutes, or until cooked through and golden brown.
  • Let cool for a few minutes before serving, garnished with fresh parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat before serving.
