  • 2 large Sweet Onions Slice thinly for even caramelization.

  • 2 cloves Garlic Minced for flavor enhancement.
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper Freshly ground for best flavor.
  • 1 tablespoon Fresh Thyme or Rosemary For added flavor.
  • 8-10 large Tortillas or Flatbreads Whole wheat or gluten-free options work well.
  • 1 cup Shredded Cheese Mozzarella or cheddar recommended.

Instructions
 

  • Slice the sweet onions thinly and set aside.
  • Heat olive oil in a large skillet over medium heat. Add sliced onions and stir to coat.
  • Sprinkle salt and pepper over the onions and stir occasionally for about 20-25 minutes until caramelized.
  • Add minced garlic to the skillet and cook for an additional 2-3 minutes until fragrant.
  • Transfer the caramelized onion mixture to a bowl to cool slightly.
  • Lay out tortillas on a clean surface. Place 4-5 slices of roast beef on each tortilla.
  • Top with about ¼ cup of caramelized onion mixture and sprinkle with cheese.
  • Roll the tortillas tightly, tucking in the sides as you go. Secure with toothpicks if needed.
  • Preheat the oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  • Place rolled tortillas seam-side down on the baking sheet and brush tops lightly with olive oil.
  • Bake for 15-20 minutes until golden brown and crispy.
  • Let cool for a few minutes, then slice into bite-sized pieces and garnish as desired.

Notes

Consider adding vegetables or different cheeses for variations. Serve with dipping sauces for added flavor.
