Instructions
Slice the sweet onions thinly and set aside.
Heat olive oil in a large skillet over medium heat. Add sliced onions and stir to coat.
Sprinkle salt and pepper over the onions and stir occasionally for about 20-25 minutes until caramelized.
Add minced garlic to the skillet and cook for an additional 2-3 minutes until fragrant.
Transfer the caramelized onion mixture to a bowl to cool slightly.
Lay out tortillas on a clean surface. Place 4-5 slices of roast beef on each tortilla.
Top with about ¼ cup of caramelized onion mixture and sprinkle with cheese.
Roll the tortillas tightly, tucking in the sides as you go. Secure with toothpicks if needed.
Preheat the oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
Place rolled tortillas seam-side down on the baking sheet and brush tops lightly with olive oil.
Bake for 15-20 minutes until golden brown and crispy.
Let cool for a few minutes, then slice into bite-sized pieces and garnish as desired.
Notes
