Instructions
Preheat your oven to 400°F (200°C).
Wash and scrub the russet potatoes thoroughly, dry them, and pierce each potato several times with a fork.
Bake the potatoes directly on the oven rack for about 45-60 minutes until tender.
Remove the potatoes from the oven and let them cool for 10-15 minutes.
In a skillet, heat 1 tablespoon of olive oil over medium heat and add the ground beef, breaking it apart as it cooks.
Season the beef with salt, black pepper, and garlic powder, cooking until browned (7-10 minutes).
Remove the beef from heat and set aside. Cut each potato in half lengthwise and scoop out some flesh, leaving about ¼ inch around the edges.
Brush the insides of the potato skins with the remaining olive oil and sprinkle with salt and pepper.
Place the potato halves skin-side down on a baking sheet lined with parchment paper and bake for an additional 10-15 minutes until golden brown.
Fill each skin with the cooked ground beef mixture, top with cheddar cheese and green onions.
Return the filled potato skins to the oven and bake for 5-7 minutes until the cheese is melted and bubbly.
Let cool for a few minutes before serving warm.
