Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the russet potatoes thoroughly, dry them, and pierce each potato several times with a fork.
  • Bake the potatoes directly on the oven rack for about 45-60 minutes until tender.
  • Remove the potatoes from the oven and let them cool for 10-15 minutes.
  • In a skillet, heat 1 tablespoon of olive oil over medium heat and add the ground beef, breaking it apart as it cooks.
  • Season the beef with salt, black pepper, and garlic powder, cooking until browned (7-10 minutes).
  • Remove the beef from heat and set aside. Cut each potato in half lengthwise and scoop out some flesh, leaving about ¼ inch around the edges.
  • Brush the insides of the potato skins with the remaining olive oil and sprinkle with salt and pepper.
  • Place the potato halves skin-side down on a baking sheet lined with parchment paper and bake for an additional 10-15 minutes until golden brown.
  • Fill each skin with the cooked ground beef mixture, top with cheddar cheese and green onions.
  • Return the filled potato skins to the oven and bake for 5-7 minutes until the cheese is melted and bubbly.
  • Let cool for a few minutes before serving warm.
