Diced Bell Peppers
Mix of red, yellow, and green.

Zucchini
Sliced into thin rounds or half-moons.

Instructions
Preheat your oven to 375°F (190°C).
Wash and dry the bell peppers and zucchini.
Slice the bell peppers into small pieces and set aside in a mixing bowl.
Slice the zucchini into thin rounds or half-moons and add to the bowl with the bell peppers.
Minced the garlic cloves.
In a skillet over medium heat, heat the olive oil until shimmering.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the diced bell peppers and zucchini to the skillet and sauté for 5-7 minutes until tender but still crunchy.
Remove from heat and stir in the chopped herbs, salt, and pepper.
Prepare the chicken breasts by slicing each horizontally to create a pocket.
Season the inside of each chicken pocket with salt and pepper.
Spoon the sautéed vegetable mixture into each chicken pocket.
Place the filled chicken pockets seam-side down on a baking sheet lined with parchment paper.
Tie each bundle securely with kitchen twine.
Drizzle with olive oil and sprinkle with salt and pepper before baking.
Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
Baste the chicken bundles with juices halfway through baking.
Allow to rest for 5 minutes before serving.
Untie the kitchen twine and serve warm, garnished with fresh herbs if desired.
Notes
Consider adding cheese or spicy elements for variations. Serve with a light salad or roasted potatoes.
