  • 2 pounds Boneless Chicken Breast Cut into 1-inch pieces.
  • 2 cups Chicken Broth Use low-sodium for better control over saltiness.
  • 12 ounces Stuffing Mix Choose a flavor like herb or traditional.
  • 1 cup Chopped Celery Adds crunch and sweetness.
  • 1 medium Onion Finely chopped.
  • 3 cloves Garlic Minced.
  • to taste Black Pepper Freshly ground.
  • 4 tablespoons Unsalted Butter For sautéing vegetables.
  • 1/4 cup Fresh Parsley Chopped, for garnish.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Cut the boneless chicken breast into 1-inch pieces and season with salt and pepper.
  • Melt 4 tablespoons of unsalted butter in a large skillet over medium heat. Add chopped onions and sauté for 3-4 minutes until translucent.
  • Add minced garlic and chopped celery to the skillet. Cook for an additional 3-5 minutes until celery is tender.
  • In a large mixing bowl, combine sautéed vegetables with chicken pieces. Pour in chicken broth and stir well.
  • Add stuffing mix to the bowl, folding it gently into the chicken and vegetable mixture.
  • Transfer the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  • Cover with aluminum foil and bake for 30 minutes.
  • Remove foil and bake for an additional 15-20 minutes until the top is golden brown and crispy.
  • Let the casserole cool for 10 minutes before serving. Garnish with freshly chopped parsley.
