Instructions
Preheat your oven to 350°F (175°C).
Cut the boneless chicken breast into 1-inch pieces and season with salt and pepper.
Melt 4 tablespoons of unsalted butter in a large skillet over medium heat. Add chopped onions and sauté for 3-4 minutes until translucent.
Add minced garlic and chopped celery to the skillet. Cook for an additional 3-5 minutes until celery is tender.
In a large mixing bowl, combine sautéed vegetables with chicken pieces. Pour in chicken broth and stir well.
Add stuffing mix to the bowl, folding it gently into the chicken and vegetable mixture.
Transfer the mixture into a greased 9x13-inch baking dish, spreading it evenly.
Cover with aluminum foil and bake for 30 minutes.
Remove foil and bake for an additional 15-20 minutes until the top is golden brown and crispy.
Let the casserole cool for 10 minutes before serving. Garnish with freshly chopped parsley.
