Instructions
 

  • Begin by prepping your ingredients. Chop the green onions, mince the garlic, and grate the ginger.
  • In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat until it shimmers.
  • Add the ground chicken or turkey to the skillet. Break it apart as it cooks, stirring occasionally for about 5-7 minutes until cooked through.
  • Add the minced garlic and grated ginger to the skillet, stirring for an additional 1-2 minutes until fragrant.
  • Add the coleslaw mix to the skillet and toss it with the meat mixture for about 3-4 minutes until wilted.
  • Pour in the low-sodium soy sauce and sprinkle black pepper to taste. Mix well.
  • Cook for another 2-3 minutes until everything is heated through.
  • Remove from heat, taste, and adjust seasoning if needed.
  • Spoon the mixture into bowls and top with chopped green onions and optional toppings.
