Ingredients
  

  • 1.5 pounds Beef Chuck Roast Cut into bite-sized pieces.
  • 3 large Onions Preferably yellow, sliced thinly.
  • 4 cloves Garlic Minced or finely chopped.
  • 4 cups Beef Broth
  • 3 cups Egg Noodles
  • 2 tablespoons Olive Oil
  • 1 tablespoon Thyme Or 1 teaspoon dried thyme.
  • 1 teaspoon Salt To taste.
  • 0.5 teaspoon Pepper To taste.
  • 0.5 cup Parmesan Cheese Freshly grated, for serving.

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add sliced onions and cook until caramelized, about 15-20 minutes.
  • Push onions to the sides and add beef, searing until browned, about 5-7 minutes.
  • Add minced garlic and cook for another minute until fragrant.
  • Pour in beef broth and scrape the bottom of the pot to deglaze.
  • Season with salt, pepper, and thyme. Stir to combine.
  • Bring to a gentle boil, then reduce heat, cover, and simmer for 45 minutes.
  • Add egg noodles, ensuring they are submerged in the liquid. Cover and cook for an additional 7-10 minutes until tender.
  • Taste and adjust seasoning if necessary.
  • Serve hot, topped with freshly grated Parmesan cheese.
