Instructions
Heat olive oil in a large pot over medium heat. Add sliced onions and cook until caramelized, about 15-20 minutes.
Push onions to the sides and add beef, searing until browned, about 5-7 minutes.
Add minced garlic and cook for another minute until fragrant.
Pour in beef broth and scrape the bottom of the pot to deglaze.
Season with salt, pepper, and thyme. Stir to combine.
Bring to a gentle boil, then reduce heat, cover, and simmer for 45 minutes.
Add egg noodles, ensuring they are submerged in the liquid. Cover and cook for an additional 7-10 minutes until tender.
Taste and adjust seasoning if necessary.
Serve hot, topped with freshly grated Parmesan cheese.
