Ingredients
  

Potatoes

  • 2 pounds Yukon Gold potatoes Peeled and cut into chunks.

Garlic

  • 4 cloves Garlic Minced.

Chives

  • 1/4 cup Fresh chives Finely chopped.

Butter

  • 4 tablespoons Unsalted butter Melted.

Milk

  • 1/2 cup Whole milk Adjust for desired creaminess.

Eggs

  • 2 large Eggs Beaten.

Salt and Pepper

  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Black pepper To taste.

Breadcrumbs

  • 1 cup Plain breadcrumbs For coating.

Olive Oil

  • 2 tablespoons Olive oil For drizzling.

Instructions
 

  • Peel and cut the potatoes into chunks, then boil in salted water until fork-tender, about 15-20 minutes.
  • Drain the potatoes and let them sit to allow excess moisture to escape.
  • In a large mixing bowl, mash the drained potatoes until smooth.
  • Add minced garlic, melted butter, and milk to the potatoes, stirring until combined.
  • Fold in the beaten eggs, chopped chives, salt, and pepper.
  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Shape the potato mixture into small puffs on the baking sheet.
  • Sprinkle breadcrumbs over each puff and drizzle with olive oil.
  • Bake for 20-25 minutes until golden brown and crispy.
  • Let cool slightly before serving warm.

Notes

These puffs can be customized with different herbs or cheeses. Serve with dips for added flavor.
