Instructions
Peel and cut the potatoes into chunks, then boil in salted water until fork-tender, about 15-20 minutes.
Drain the potatoes and let them sit to allow excess moisture to escape.
In a large mixing bowl, mash the drained potatoes until smooth.
Add minced garlic, melted butter, and milk to the potatoes, stirring until combined.
Fold in the beaten eggs, chopped chives, salt, and pepper.
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Shape the potato mixture into small puffs on the baking sheet.
Sprinkle breadcrumbs over each puff and drizzle with olive oil.
Bake for 20-25 minutes until golden brown and crispy.
Let cool slightly before serving warm.
