Instructions
Start by preparing the brisket. Rinse the meat under cold water and pat it dry with paper towels.
Season the brisket generously with the spice mixture of smoked paprika, cumin, black pepper, and salt.
Heat a large skillet over medium-high heat. Add a drizzle of oil and sear the brisket on all sides until browned, about 3-4 minutes per side.
Remove the brisket from the skillet and set it aside. In the same skillet, add sliced onions and cook until translucent and caramelized, about 8-10 minutes. Stir in minced garlic and cook for an additional 1-2 minutes.
Transfer the caramelized onions and garlic to a slow cooker. Place the seared brisket on top and pour the beef broth over the meat.
Cover the slow cooker and set it to low heat. Allow the brisket to cook for 8-10 hours, or until fork-tender.
When done, remove the brisket from the slow cooker and let it rest for about 15 minutes before slicing.
Slice the brisket against the grain into thick pieces.
Assemble the sandwich by placing sliced brisket onto the bottom half of each roll, topping with cheese and your favorite condiment.
Cover with the top half of the roll and press down gently.
Optionally, toast the assembled sandwiches in a pan or oven until the cheese is melted and the bread is golden brown.
Serve warm, garnished with fresh herbs.
Notes
Consider customizing your sandwich with different toppings or types of bread for a unique twist.
