  • 8 ounces Provolone or cheddar cheese Sliced.

Instructions
 

  • Start by preparing the brisket. Rinse the meat under cold water and pat it dry with paper towels.
  • Season the brisket generously with the spice mixture of smoked paprika, cumin, black pepper, and salt.
  • Heat a large skillet over medium-high heat. Add a drizzle of oil and sear the brisket on all sides until browned, about 3-4 minutes per side.
  • Remove the brisket from the skillet and set it aside. In the same skillet, add sliced onions and cook until translucent and caramelized, about 8-10 minutes. Stir in minced garlic and cook for an additional 1-2 minutes.
  • Transfer the caramelized onions and garlic to a slow cooker. Place the seared brisket on top and pour the beef broth over the meat.
  • Cover the slow cooker and set it to low heat. Allow the brisket to cook for 8-10 hours, or until fork-tender.
  • When done, remove the brisket from the slow cooker and let it rest for about 15 minutes before slicing.
  • Slice the brisket against the grain into thick pieces.
  • Assemble the sandwich by placing sliced brisket onto the bottom half of each roll, topping with cheese and your favorite condiment.
  • Cover with the top half of the roll and press down gently.
  • Optionally, toast the assembled sandwiches in a pan or oven until the cheese is melted and the bread is golden brown.
  • Serve warm, garnished with fresh herbs.
