  • Begin by preparing your ingredients. Dice the potatoes, corned beef, onions, and bell peppers into small, uniform pieces.
  • In a large skillet, heat the olive oil over medium heat until it shimmers.
  • Add the diced potatoes to the skillet and cook for about 10-12 minutes, stirring occasionally until golden brown.
  • Add the chopped onions and bell peppers to the skillet and cook for another 5-7 minutes until softened.
  • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Introduce the diced corned beef into the skillet and stir to combine, cooking for about 5-7 minutes.
  • Season with salt and pepper to taste, stirring well.
  • Remove from heat and sprinkle chopped parsley over the top.
  • Serve immediately while hot, optionally with a fried or poached egg on top.
