Instructions
Begin by preparing your ingredients. Dice the potatoes, corned beef, onions, and bell peppers into small, uniform pieces.
In a large skillet, heat the olive oil over medium heat until it shimmers.
Add the diced potatoes to the skillet and cook for about 10-12 minutes, stirring occasionally until golden brown.
Add the chopped onions and bell peppers to the skillet and cook for another 5-7 minutes until softened.
Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
Introduce the diced corned beef into the skillet and stir to combine, cooking for about 5-7 minutes.
