Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, place the stale bread cubes.
In a skillet, heat olive oil over medium heat and sauté onion and celery for 5-7 minutes until tender.
Add minced garlic and cook for an additional minute.
Combine the sautéed mixture with the bread cubes and drizzle in vegetable broth, mixing until moist.
Add fresh herbs, salt, and pepper, and mix well.
Incorporate the beaten eggs and mix thoroughly.
Shape the mixture into golf ball-sized balls and place them on a baking sheet lined with parchment paper.
Bake for 25-30 minutes until golden brown, turning halfway through.
Let cool for a few minutes before serving.
