Instructions
Cut the chicken breasts into bite-sized pieces, approximately 1 to 2 inches in size.
In a large mixing bowl, combine the lemon juice, minced garlic, and olive oil. Whisk until well blended.
Add salt and pepper to the marinade, whisk again to incorporate. Adjust seasoning if necessary.
Add the chicken pieces to the marinade and toss to coat thoroughly.
Cover the bowl with plastic wrap or transfer to a resealable plastic bag. Marinate in the refrigerator for at least 30 minutes, up to 2 hours.
Preheat the oven to 400°F (200°C) or prepare a grill for medium-high heat.
Spread the marinated chicken pieces on a baking sheet or grill. Ensure they are not overcrowded.
Cook for 15-20 minutes in the oven or 10-12 minutes on the grill, turning halfway through, until golden brown and cooked through.
Let the chicken rest for a few minutes before serving.
Garnish with chopped parsley and serve warm.
Notes
For a spicy kick, add red pepper flakes to the marinade. You can also use chicken thighs instead of breasts for a richer flavor.
