Chicken Breast

  • 1.5 pounds Boneless, Skinless Chicken Breasts Cut into bite-sized pieces.

Marinade Ingredients

  • 2 large Lemons (juiced) Fresh lemon juice preferred.
  • 4-5 cloves Garlic (minced) Fresh garlic for robust flavor.
  • 1/4 cup Extra-Virgin Olive Oil Helps to tenderize the chicken.
  • 1 teaspoon Kosher Salt Enhances flavor.
  • 1/2 teaspoon Freshly Ground Black Pepper Adds a subtle kick.
  • 1 handful Fresh Parsley (chopped) For garnish.

Instructions
 

  • Cut the chicken breasts into bite-sized pieces, approximately 1 to 2 inches in size.
  • In a large mixing bowl, combine the lemon juice, minced garlic, and olive oil. Whisk until well blended.
  • Add salt and pepper to the marinade, whisk again to incorporate. Adjust seasoning if necessary.
  • Add the chicken pieces to the marinade and toss to coat thoroughly.
  • Cover the bowl with plastic wrap or transfer to a resealable plastic bag. Marinate in the refrigerator for at least 30 minutes, up to 2 hours.
  • Preheat the oven to 400°F (200°C) or prepare a grill for medium-high heat.
  • Spread the marinated chicken pieces on a baking sheet or grill. Ensure they are not overcrowded.
  • Cook for 15-20 minutes in the oven or 10-12 minutes on the grill, turning halfway through, until golden brown and cooked through.
  • Let the chicken rest for a few minutes before serving.
  • Garnish with chopped parsley and serve warm.

Notes

For a spicy kick, add red pepper flakes to the marinade. You can also use chicken thighs instead of breasts for a richer flavor.
