Instructions
Gather all your ingredients and prep the chicken and vegetables.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken and sauté until golden brown, about 5-7 minutes.
Add minced garlic and diced onion to the skillet. Stir for about 2 minutes until the onion is translucent.
Incorporate the diced bell peppers and sauté for another 3-4 minutes.
Add chili powder, cumin, salt, and pepper. Stir well and cook for an additional minute.
Pour in the heavy cream and let it simmer for about 5 minutes to thicken.
Slowly add the shredded cheddar cheese, stirring until melted and smooth.
