Heat a large pot over medium heat and add sesame oil until it shimmers.
Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
Incorporate sliced mushrooms and cook for about 5 minutes until tender.
Pour in vegetable broth and bring to a gentle simmer.
Add frozen potstickers and cook for 6-8 minutes until heated through.
Add chopped bok choy and simmer for an additional 2-3 minutes.
Season with soy sauce and black pepper to taste.
Remove from heat, ladle into bowls, and garnish with green onions and a drizzle of sesame oil.
