Instructions
Preheat your oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
Slice the whole wheat bread into ½ inch thick slices.
Once the garlic is roasted and cooled, squeeze the cloves into a bowl and mash until smooth.
Combine the shredded cheddar and sliced Swiss cheese in a bowl. If using, fold in fresh herbs.
Spread 1-2 tablespoons of the roasted garlic spread on one side of each slice of bread.
On the non-garlic side of one slice, pile the cheese mixture, then top with the second slice, garlic side facing in.
Preheat a skillet over medium heat and spread softened butter on the outside of the sandwich.
Place the sandwich in the skillet and cook for 3-4 minutes until golden brown, then flip and cook the other side.
Remove from skillet, let rest for a minute, then slice in half and serve warm.
Notes
For variations, try different cheese combinations, add sautéed vegetables, or serve with dips.
