Instructions
Begin by prepping your ingredients. Peel and dice the sweet potatoes into small cubes, ensuring they are uniform in size for even cooking. Chop the bell peppers and onion, and mince the garlic.
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Allow the oil to warm up for about a minute until it shimmers.
Add the diced onions to the skillet first. Sauté them for about 3-4 minutes until they become translucent and start to soften.
Next, add the minced garlic to the skillet, stirring for about 30 seconds until fragrant.
Add the diced sweet potatoes to the skillet. Stir well to combine with the onions and garlic. Season with salt, pepper, paprika, and cumin.
