  • 2 medium Sweet Potatoes Peeled and diced into small cubes.
  • 1 each Red Bell Pepper Diced.
  • 1 each Green Bell Pepper Diced.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 2 tablespoons Olive Oil Extra virgin.

Spices

  • 1 teaspoon Paprika
  • 1 teaspoon Cumin

Seasoning

  • Salt To taste.
  • Pepper To taste.

Garnish

  • 1 bunch Fresh Herbs Chopped parsley or cilantro.

Instructions
 

  • Begin by prepping your ingredients. Peel and dice the sweet potatoes into small cubes, ensuring they are uniform in size for even cooking. Chop the bell peppers and onion, and mince the garlic.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Allow the oil to warm up for about a minute until it shimmers.
  • Add the diced onions to the skillet first. Sauté them for about 3-4 minutes until they become translucent and start to soften.
  • Next, add the minced garlic to the skillet, stirring for about 30 seconds until fragrant.
  • Add the diced sweet potatoes to the skillet. Stir well to combine with the onions and garlic. Season with salt, pepper, paprika, and cumin.
  • Cover the skillet with a lid and let the sweet potatoes cook for about 10-15 minutes, stirring occasionally.
  • After 10-15 minutes, add the diced bell peppers to the skillet. Stir to combine and continue cooking uncovered for an additional 5-7 minutes.
  • Check the sweet potatoes for doneness by piercing them with a fork. They should be tender but not mushy.
  • Once everything is cooked to perfection, remove the skillet from heat. Garnish the hash with freshly chopped herbs.
  • Serve the Savory Sweet Potato Hash hot, either as a main dish or as a side.
