Instructions
Preheat your air fryer to 350°F (175°C).
Prepare your ingredients: chop green onions and measure mixed vegetables.
In a bowl, beat the eggs until well mixed and set aside.
Add vegetable oil to the air fryer basket, followed by mixed vegetables. Air fry for 5-7 minutes, shaking halfway through.
Push vegetables to one side, pour in beaten eggs, and scramble for about 2 minutes.
Add cooked rice, soy sauce, salt, and pepper. Fold everything together.
Air fry for an additional 8-10 minutes, stirring every 3 minutes.
Once golden and crispy, remove from air fryer and adjust seasoning if necessary.
Transfer to a serving bowl and garnish with green onions. Serve immediately.
Notes
For variations, consider adding proteins like chicken or shrimp, or using different vegetables.
