Boneless Skinless Chicken Breast
Cut into small cubes.

Black Beans
Drained and rinsed.

Corn
Frozen or canned, thawed if frozen.

Diced Bell Peppers
Red, yellow, or green.

Finely chopped.

For serving.
Instructions
Prepare all ingredients: Dice chicken, rinse beans, thaw corn, chop peppers and onion, and mince garlic.
In a skillet, heat oil over medium heat. Sauté onion for 3-4 minutes until translucent, then add garlic and cook for 1 minute.
Add chicken to the skillet, sprinkle with spices, and cook for 6-8 minutes until fully cooked.
Stir in black beans, corn, and bell peppers. Heat through for another 3-4 minutes.
Remove from heat and let filling cool for a few minutes.
Preheat air fryer to 375°F (190°C).
Assemble burritos: Place filling and cheese in the center of each tortilla, fold sides, and roll tightly.
Spray air fryer basket with cooking spray, place burritos seam-side down, and cook for 10-12 minutes, flipping halfway.
Remove burritos from air fryer and let sit for a minute before serving.
Serve with sour cream or Greek yogurt.
