Instructions
Begin by cutting the boneless, skinless chicken breasts into bite-sized pieces.
In a mixing bowl, whisk together the flour, rice flour, and a pinch of salt.
In another bowl, beat the eggs until well combined.
Heat the vegetable oil in a large skillet over medium-high heat.
Coat each piece of chicken in the egg mixture, then dredge in the flour mixture.
Carefully place the coated chicken pieces into the hot oil and fry in batches.
Cook the chicken for about 3-4 minutes on each side until golden brown.
Remove the chicken from the oil and place it on a paper towel-lined plate.
In a separate bowl, mix together the mayonnaise, sweet chili sauce, garlic powder, and a pinch of salt.
