Coating

Sauce

Garnish

Instructions
 

  • Begin by cutting the boneless, skinless chicken breasts into bite-sized pieces.
  • In a mixing bowl, whisk together the flour, rice flour, and a pinch of salt.
  • In another bowl, beat the eggs until well combined.
  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Coat each piece of chicken in the egg mixture, then dredge in the flour mixture.
  • Carefully place the coated chicken pieces into the hot oil and fry in batches.
  • Cook the chicken for about 3-4 minutes on each side until golden brown.
  • Remove the chicken from the oil and place it on a paper towel-lined plate.
  • In a separate bowl, mix together the mayonnaise, sweet chili sauce, garlic powder, and a pinch of salt.
  • Toss the fried chicken in the sauce until well-coated.
  • Transfer the sauced chicken to a serving platter and garnish with chopped green onions.
  • Serve immediately while hot.

Notes

For a healthier twist, consider baking the coated chicken instead of frying.
