Instructions
Bring a large pot of salted water to a rolling boil.
Add 8 ounces of pasta and cook according to package instructions until al dente, about 8-10 minutes.
While the pasta cooks, rinse 2 cups of broccoli florets under cold water and chop into bite-sized pieces.
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 30 seconds.
Add chopped broccoli to the skillet and cook for 5-7 minutes until bright green and tender.
Reserve 1 cup of pasta cooking water, then drain the pasta and add it to the skillet with the broccoli.
Pour in ¼ cup of reserved pasta water and stir to combine.
Add lemon zest and season with salt and pepper to taste.
If the pasta seems dry, add more reserved pasta water until desired consistency is reached.
Serve hot, topped with freshly grated Parmesan cheese.
Notes
For added protein, consider incorporating grilled chicken or chickpeas. You can also add a splash of heavy cream for a creamier texture.
