Instructions
 

  • 1. Preheat your oven to 350°F (175°C).
  • 2. In a large skillet, heat olive oil over medium heat. Add diced bell peppers and onions, sauté for about 5 minutes.
  • 3. Add chopped spinach to the skillet and stir for another 2-3 minutes until wilted. Remove from heat.
  • 4. In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
  • 5. Stir in the sautéed vegetables into the egg mixture.
  • 6. Fold in cubed bread and let sit for 10 minutes to absorb flavors.
  • 7. Grease a 9x13-inch baking dish and pour in the mixture, spreading evenly.
  • 8. Sprinkle shredded cheese over the top.
  • 9. Bake for 35-40 minutes until golden brown and a toothpick comes out clean.
  • 10. Let the casserole rest for 10 minutes before slicing and serving.
