Instructions
Season the chicken breasts generously with salt and pepper on both sides.
Heat a grill pan or outdoor grill over medium-high heat and add a drizzle of olive oil.
Grill the chicken for about 6-7 minutes on each side until the internal temperature reaches 165°F.
While the chicken is cooking, wash and slice the tomatoes into thick rounds.
Slice the fresh mozzarella into rounds approximately 1/4 inch thick.
Remove the chicken from the grill and let it rest for 5 minutes before slicing.
Assemble the salad by layering sliced tomatoes, mozzarella, and grilled chicken on a serving platter.
Sprinkle torn basil leaves over the top.
Drizzle with balsamic glaze and olive oil, then season with additional salt and pepper.
Serve immediately and enjoy the vibrant flavors.
