  • 1 can Black Beans Drained and rinsed, adds protein and creamy texture.

  • 1 can Diced Tomatoes With juices, contributes acidity and moisture.
  • 1 cup Bell Peppers Chopped, preferably a mix of colors for visual appeal.
  • 1 medium Onion Chopped, gives a deep savory flavor.
  • 3 cloves Garlic Minced, adds a punch of flavor.
  • 2 tablespoons Chili Powder Provides heat and complexity.
  • 1 teaspoon Cumin Adds a warm, earthy flavor.

Instructions
 

  • Prepare your ingredients: chop the onion, bell peppers, and garlic, and measure out the canned ingredients.
  • Place the boneless chicken breasts at the bottom of the crockpot.
  • Add the chopped onion and bell peppers on top of the chicken.
  • Sprinkle the minced garlic over the vegetables.
  • Pour the can of diced tomatoes over the chicken and vegetables.
  • Add the drained and rinsed black beans and corn to the mix.
  • In a small bowl, combine the chili powder, cumin, salt, and pepper, then sprinkle over the mixture.
  • Drizzle the freshly squeezed lime juice over the top.
  • Cover the crockpot and set it to low for 6 to 8 hours or high for 3 to 4 hours.
  • Check the chicken for doneness about 30 minutes before serving.
  • Shred the chicken directly in the crockpot if desired.
  • Stir the contents of the crockpot to combine all ingredients.
  • Taste and adjust seasoning if necessary before serving.
  • Serve hot, garnished with fresh cilantro or green onions if desired.

Notes

Consider adding cream cheese for a creamier texture or different beans for variety.
