Instructions
Prepare your ingredients. Cook the rice ahead of time and allow it to cool completely.
Heat a large skillet or wok over medium-high heat. Add the vegetable oil and let it warm for a minute.
Add the minced garlic and stir-fry for about 30 seconds, or until fragrant.
Add the chopped vegetables and stir-fry for about 3-4 minutes until tender but still crisp.
Push the vegetables to one side of the pan. Pour the beaten eggs into the empty space and cook undisturbed for about 1 minute.
Gently scramble the eggs and mix them with the vegetables.
Add the cooled rice, breaking up any clumps, and stir everything together.
Drizzle the soy sauce over the rice and stir-fry for about 3-4 minutes.
Add the sesame oil and stir one last time. Cook for an additional minute.
Remove from heat and garnish with chopped green onions before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently.
