Ingredients
  

Rice

  • 2 cups Long-grain rice Preferably day-old for firmer texture.

Vegetables

  • 1 cup Mixed fresh vegetables (bell peppers, peas, carrots, green onions) Chopped into small, bite-sized pieces.

Garlic

  • 2 cloves Garlic Mince for flavor infusion.

Oil

  • 2 tablespoons Vegetable oil For frying.

Eggs

  • 2 large Eggs Lightly beaten.

Soy Sauce

  • 2 tablespoons Soy sauce For seasoning.

Sesame Oil

  • 1 teaspoon Sesame oil For flavor enhancement.

Salt and Pepper

  • Salt To taste.
  • Pepper To taste.

Instructions
 

  • Prepare your ingredients. Cook the rice ahead of time and allow it to cool completely.
  • Heat a large skillet or wok over medium-high heat. Add the vegetable oil and let it warm for a minute.
  • Add the minced garlic and stir-fry for about 30 seconds, or until fragrant.
  • Add the chopped vegetables and stir-fry for about 3-4 minutes until tender but still crisp.
  • Push the vegetables to one side of the pan. Pour the beaten eggs into the empty space and cook undisturbed for about 1 minute.
  • Gently scramble the eggs and mix them with the vegetables.
  • Add the cooled rice, breaking up any clumps, and stir everything together.
  • Drizzle the soy sauce over the rice and stir-fry for about 3-4 minutes.
  • Add the sesame oil and stir one last time. Cook for an additional minute.
  • Remove from heat and garnish with chopped green onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat gently.
