Instructions
 

  • Wash and chop the broccoli into bite-sized florets, then set aside.
  • Melt the butter in a large pot over medium heat.
  • Add the chopped onion and cook for 4-5 minutes until translucent.
  • Add minced garlic and sauté for 1-2 minutes until fragrant.
  • Pour in the vegetable broth and bring to a gentle simmer.
  • Add the chopped broccoli and simmer for 10-12 minutes until tender.
  • Remove from heat and blend the soup until smooth with an immersion blender.
  • Return to low heat and stir in milk and cheddar cheese until melted.
  • Season with salt and pepper to taste, then heat through.
