Rinse under cold water before cooking.

Instructions
Rinse the rice under cold water until the water runs clear.
In a medium saucepan, combine the rinsed rice and water. Add olive oil if using.
Bring the mixture to a boil over medium-high heat.
Add salt and stir gently.
Cover and reduce heat to low. Simmer for 18-20 minutes without lifting the lid.
Remove from heat and let sit covered for 5 minutes.
Fluff the rice with a fork.
Add cilantro and lime juice, folding gently to combine.
Taste and adjust seasoning if necessary.
Serve warm as a side dish or base for your favorite protein.
Notes
For variations, consider adding diced jalapeños for heat or mixing in black beans for added texture.
