Instructions
Rinse the bell peppers under cold water, then slice them into thin strips. Peel the onion and slice it into wedges.
In a large skillet, heat olive oil over medium-high heat until shimmering.
Add the sliced onions to the skillet and sauté for 3-4 minutes until translucent.
Add the bell pepper strips to the skillet and cook for an additional 5-7 minutes until tender yet crisp.
Sprinkle in garlic powder, cumin, chili powder, salt, and pepper. Stir to combine and sauté for another minute.
Remove from heat, taste, and adjust seasoning if necessary. Serve warm.
Notes
These fajita veggies can be served in tacos, over rice, or as a side dish. Store leftovers in an airtight container for up to three days.
