Ingredients
  

Vegetables

  • 2-3 large Bell Peppers (mixed colors) Sliced into thin strips.
  • 1 large Onion Preferably yellow or red, sliced into wedges.
  • 2 tablespoons Olive Oil For sautéing the vegetables.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 0.5 teaspoon Salt Adjust to taste.
  • to taste Pepper Freshly ground.

Instructions
 

  • Rinse the bell peppers under cold water, then slice them into thin strips. Peel the onion and slice it into wedges.
  • In a large skillet, heat olive oil over medium-high heat until shimmering.
  • Add the sliced onions to the skillet and sauté for 3-4 minutes until translucent.
  • Add the bell pepper strips to the skillet and cook for an additional 5-7 minutes until tender yet crisp.
  • Sprinkle in garlic powder, cumin, chili powder, salt, and pepper. Stir to combine and sauté for another minute.
  • Remove from heat, taste, and adjust seasoning if necessary. Serve warm.

Notes

These fajita veggies can be served in tacos, over rice, or as a side dish. Store leftovers in an airtight container for up to three days.
