  • 4 large Yellow Onions Thinly sliced, essential for sweetness and flavor.
  • 4 tablespoons Unsalted Butter For sautéing the onions.
  • 2 cloves Garlic Minced for added flavor.
  • 6 cups Low-sodium Beef Broth Acts as the base of the soup.
  • 1 teaspoon Dried Thyme For aromatic flavor.
  • 1 leaf Bay Leaf For depth of flavor.

  • to taste Black Pepper Freshly ground for seasoning.
  • 1 loaf Baguette Sliced into rounds for topping.
  • 1 cup Grated Gruyère Cheese For topping the soup.

Instructions
 

  • 1. Heat a large stockpot over medium heat and melt the butter.
  • 2. Add the sliced onions and stir to coat in butter.
  • 3. Cook the onions for about 15 minutes, stirring occasionally.
  • 4. Reduce heat to medium-low and continue cooking for 30-40 minutes until caramelized.
  • 5. Add minced garlic and sauté for 1 minute until fragrant.
  • 6. Pour in the beef broth and stir to combine.
  • 7. Add thyme and bay leaf, then season with salt and pepper.
  • 8. Bring to a gentle simmer and cook uncovered for 20-30 minutes.
  • 9. Preheat oven to 350°F (175°C) and toast the sliced baguette for 10 minutes.
  • 10. Ladle soup into oven-safe bowls, top with toasted baguette and Gruyère cheese.
  • 11. Bake for 10-15 minutes until cheese is bubbly and golden brown.
  • 12. Serve immediately, garnished with fresh thyme if desired.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently on the stove.
