Gather all ingredients and ensure they are at room temperature.
In a mixing bowl, combine warm water and active dry yeast. Let sit for 5-10 minutes until frothy.
Add honey and olive oil to the yeast mixture and stir gently.
In a large bowl, mix all-purpose flour, rolled oats, and salt.
Create a well in the dry ingredients and pour in the yeast mixture. Combine until a rough dough forms.
Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
Place the dough in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
Punch down the dough, shape it into a loaf, and place it in a greased loaf pan. Let rise for another 30-45 minutes.
Preheat the oven to 350°F (175°C).
Bake the loaf for 30-35 minutes until golden brown and sounds hollow when tapped.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
