Instructions
Rinse the rice under cold water to remove excess starch and drain.
Heat vegetable oil in a medium saucepan over medium heat. Add chopped onion and sauté until translucent.
Add minced garlic and stir for about 30 seconds until aromatic.
Add the rinsed rice to the saucepan and stir to coat with oil. Cook for 2-3 minutes until slightly toasted.
Pour in tomato sauce and stir to combine.
Add vegetable broth, cumin, and salt. Mix well.
Bring to a boil, then reduce heat to low and cover. Simmer for 18-20 minutes until liquid is absorbed.
Remove from heat and let sit covered for 5-10 minutes.
Fluff the rice with a fork and garnish with cilantro before serving.
Serve warm as a side dish or part of a larger meal.
Notes
Store leftovers in an airtight container for up to 4 days. Reheat with a splash of broth.
