Instructions
 

  • Rinse the rice under cold water to remove excess starch and drain.
  • Heat vegetable oil in a medium saucepan over medium heat. Add chopped onion and sauté until translucent.
  • Add minced garlic and stir for about 30 seconds until aromatic.
  • Add the rinsed rice to the saucepan and stir to coat with oil. Cook for 2-3 minutes until slightly toasted.
  • Pour in tomato sauce and stir to combine.
  • Add vegetable broth, cumin, and salt. Mix well.
  • Bring to a boil, then reduce heat to low and cover. Simmer for 18-20 minutes until liquid is absorbed.
  • Remove from heat and let sit covered for 5-10 minutes.
  • Fluff the rice with a fork and garnish with cilantro before serving.
  • Serve warm as a side dish or part of a larger meal.

Notes

Store leftovers in an airtight container for up to 4 days. Reheat with a splash of broth.
