Instructions
1. In a small bowl, combine warm water and active dry yeast. Stir gently and let it sit for 5-10 minutes until frothy.
2. In a large mixing bowl, combine sifted flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a shaggy dough forms.
3. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
4. Place the dough in a greased bowl, cover with a towel, and let it rise in a warm area for 1 to 1.5 hours until doubled in size.
5. Prepare the tomato sauce by simmering it with a pinch of salt and oregano for about 15 minutes.
6. Preheat the oven to 475°F (245°C) and place a pizza stone inside if you have one.
7. Punch down the risen dough, divide it into two portions, and shape each into a 12-inch circle on a floured surface.
8. Spread tomato sauce over the shaped dough, leaving a border for the crust, and sprinkle with mozzarella cheese.
9. Add your choice of toppings, being careful not to overload the pizza.
10. Bake the pizza for 10-15 minutes until the crust is golden brown and the cheese is bubbly.
11. Garnish with fresh basil or oregano, let cool slightly, slice, and serve.
